You're stuck inside and need a yummy semi-healthy snack for you and your kids. These are quick to make, delicious and a great activity to do with kids. They can be made really big or smaller for snacking and have an ingredient list of pantry staples...
To make the dough you'll need...
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 scant teaspoon salt
1/2 teaspoon cinnamon
1/2 cup light brown sugar
2 tablespoons maple syrup
1/2 cup natural applesauce
1/4 cup oil of choice (safflower, vegetable, olive, etc.)
1/2 teaspoon vanilla
1 1/2 cup rolled oats
1/2 cup any color raisins and/or dates cut into small pieces & rolled in flour (I used both)
Directions:
- Pour all ingredients into a large bowl and mix gently until well combined. Let rest for 10 minutes.
- Preheat oven to 350 degrees F. Put balls of dough on a greased or parchment-lined cookie sheet. It doesn't matter the size as long as they are all similar for a single bake.
- Before placing in the oven, flatten the tops of the balls with a moistened palm, creating a nice disc shaped cookie. Otherwise these will stay very round in the oven.
- Bake until golden brown. You'll smell when they're ready, but about 12 minutes for small cookies and 15-17 for larger cookies is a good estimate.
